Key Responsibilities:

  • Lead a specific sushi section with full responsibility for setup, execution, and breakdown
  • Maintain consistency and excellence in plating, taste, and presentation
  • Execute precision knife work, fish butchery, and rice handling to the highest standards
  • Inspect and prepare daily mise en place, including filleting fish, preparing garnishes, sauces, and condiments
  • Ensure all ingredients meet the kitchen’s exacting standards for freshness
  • Assemble orders during service with refined technique, speed, and attention to detail
  • Adjust preparation and plating based on diners’ preferences and dietary restrictions, when approved
  • Always maintain pristine cleanliness in the section, following internal hygiene protocols
  • Ensure proper handling and storage of raw seafood to avoid contamination and preserve integrity

Candidate profile:

  • Mastery in sushi preparation, fish handling, and rice conditioning
  • Deep knowledge of seasonal and regional seafood
  • Impeccable knife skills and workstation cleanliness
  • Strong time management and service pacing under pressure
  • Calm, disciplined demeanour with high attention to sensory detail (taste, texture, aroma, aesthetics)
  • Expertise in omakase is preferable
  • Conversational English is required for effective kitchen and guest communication 
  • At least 2 years of culinary experience working as a Sushi Chef in a fine dining restaurant or omakase
  • Positive attitude and high energy
  • Must be able to work flexible hours, including weekends and holidays
